Open Question: Baptism celebration...help with menu please?

Hi we are having my son's baptism next weekend, he is 5 months old by the way. We have invited 30 couples and their children and are expecting about 40 ppl total to actually show. I want to make sure there is enough variety for everyone to eat and enjoy cooking for parties so any suggestions are appreciated. this is what I have so far for the menu- Taco dip, salsa, queso and tortilla chips Pretzels and cheese relish tray (olives, peppers,pickles) Watermelon carved into a basket filled with melon balls, pineapple,grapes and strawberries Veggie tray Mini cannollies, eclairs and Italian cookies potato chips and onion dip Cheese, crackers and sausage Ham and rolls, beef and gravy and rolls Italian potato salad Japanese cucumber salad Pasta salad Mastacholi and red sauce tossed salad baked beans For dessert we are having a cake made by a friend's Italian bakery that we designed and ice cream. The cake is pretty elaborate so we are not having any other desserts. Any suggestions of what I should add or maybe what I should take away? Voting Question: Which meal should I make first out of my three course meal?

Okay, I want to plan my day out, so everything will be ready at a certain time, so we can eat with small intervals in between. Im cooking a three course meal on Saturday, and want to get everything ready by at least 4. Italian-style stuffed peaches - Starter = Takes 15 mins to prepare and make Pizza quiches with green salad and new potatoes and herbs - Main = Takes about 35 mins to prepare and cook everything Summer berry fruit cups with citrus vanilla cream - Dessert = 10 mins to prepare with 2-3 hours chilling I have a free day on the whole Saturday So anything is good for me When do you reckon I should start cooking and preparing, and which meal should I do first, because I was thinkin of doing the dessert first because it needs to chill, then do the main a little bit before everything, and the starter just before I do the meal because it only takes 15 mins What do you reckon? Here is the recipe I will be using Crock Pot Cowboy Beans 1 pound browned hamburger (can use turkey) --2 cloves chopped garlic --1 can tomato sauce --1 can diced Italian seasoned tomatoes --1 can corn, drained --2 cans whole baby potatoes, drained (unless you can find a great big can of potatoes) --1 can tomatoes with green chilies --1 can Ranch Style beans (with the baked beans in the grocery store) --1 cup water --sliced jalapeno peppers for garnish (optional) The Directions. This makes a lot. Make sure that your crockpot is at least 5qts. Brown the hamburger with the chopped garlic cloves on the stove top. Drain the fat. Let sit in the pan for a bit to cool. Open all of you cans, and dump them into the crockpot. Drain the corn and the potatoes, but add the rest of the can liquid to the crockpot. After adding all of the can contents, add the browned meat and a cup of water. Stir with a spoon to mix a bit. Cover and cook on low for 8-10 hours, or on high for 4-5. Soup and stew tastes better the longer you cook it, so opt for the longer cooking time if you can. Garnish with sliced jalapeno peppers, if desired. I'm throwing a party and for the meal I'm having boneless/skinless chicken breasts, roasted redskin potatoes, and a vegetable melody. The potatoes and veggies are taken care of, but I need help with the chicken. I'm going to put them in the alluminum steamer type pans with some chicken broth and some Italian seasoning. I want to make an italian sausage with potatoes and peppers mix but I don't want the sausage to look like a mess. He made a living, and the family was never without Kosher salami and ice-cream for breakfast, when he was on nights, But I do feel that, as with school bullies, the American way is to tramp on someone, before they get a chance to stamp on you. It is almost like an insecurity thing. Germans are arrogant on holiday (yet nice people in their own country); Japanese seem to find themselves bowing down, given any opportunity (I suspect through their treatment of POW's in WW2); Chinese continue to totally disregard Human Rights; African dictatorships leave their own people starving to death in their millions and English people still think we have an Empire, having stripped India, Pakistan, South Africa and every other place they can think off and continue to do so at the first opportunity by employing cheap labour, thus leaving hundreds of thousands of well qualified workers out of jobs here and ergo leading to increased poverty and crime. I would like to bake a frittata with potatoes, but am afraid if I add them shredded they will make it watery. I am also adding to the 12 eggs italian sausage (I will cook & drain first), an onion, a green pepper, shredded cheese and a shredded zucchini. Should I pan fry them all lightly to remove excess water before adding them to the glass baking dish with the eggs? I will bake for 45 min until it has hardened, right? And then in the last few minutes top with sliced black olives and more cheese to brown up the top. Do any of you have any warnings about doing this or suggestions? Anything helps. I'm thinking of making dinner for my boyfriend for Valentine's Day and I had this in mind, what do you think? Any tips or suggestions?? Garlic Bread Brush toasted bread (what kind is best?) with: minced garlic, butter, olive oil (all mixed together), then sprinkle with cheese (what kind is best?) and parsley on top Baked Potato Soup Melt butter and add finely diced leeks and minced garlic, whisk in hot chicken stock. In a separate bowl whisk together potato, buttermilk, sour cream, and grated parmesan cheese. Add to soup, season with salt & pepper. Add sherry vinegar (do you think?), garnish with chives. Would cheddar be better than parmesan? Mashed Potatoes Boil potatoes with a bay leaf and salt until tender. Drain, remove bay leaf. In small pan heat butter & cream. Mash potatoes, add hot cream and season with salt & pepper. Stir with a spoon and add chives. Steak Tips on how to cook it?? Marinade: Olive oil, lemon juice or red wine vinegar, soy sauce?, garlic, salt & pepper, sugar, italian seasoning, and worcestershire sauce. Brownies: 1 stick unsalted butter, 2oz unsweetened chocolate (butter and choc melted together). Then, removed from heat, add 2 eggs, 1 cup sugar, 1/2 teas. vanilla extract. My boyfriend and I both love Italian food, but I've never really had a whole lot of experience, cooking wise, with it, aside from the basic Pasta Carbonara and lasagna, though I do tend to pick things up rather quickly. I really want to make him dinner on Valentine's Day, and I need ideas for a dish that would really blow him away, that I can manage, and that does not need to be served immediately after cooking (long story short, we're going to the drive-in and having a picnic IN the car). Some tips that may, hopefully, help you: * We both LOVE pasta, any kind of pasta you can throw at us. * We both hate seafood. * He's allergic to coconut, though I've never seen an italian recipe call for coconut... ever. * He doesn't like pizza. * We're both extremely carnivorous - the more meat, the better. * We both enjoy potatoes a lot, as well. This coming week I'm tight on $$. I usually cut all expenses and when it comes to dinner, I try to budget for 2-in-1 meals. It's just the 2 of us, but my b/f eats for 2. I bought split chix breast at the meat market(89Cts/lb), which is 10cts less than the grocery store. I bought 5 lbs-(using 2-2 1/2lbs for mexican Mole) and the other half for next nights' fried chix. Pork chops,fried chicken,skirt steak is the usual menu. I love cooking but just wish the "ectras" when it comes to a recipe, didn't cost so darn much! I used to be stocked when it came to spices and pantry staples, but now I just go day by day. I ran out of spices but only buy whats needed b/c spices are so dang expensive! I pretty much do my esscential shopping once a week (which happens to be this Sunday). Here's an idea of my grocery list(please help differsify it!). Also note: I live in Deep S TX and my b/f is mexican. Almost every meal is served with corn tortillas and hardly any sides... Ok Ok so it isn't exactly a question so much as it is a ploy to share an incredible recipe with all of you for the Christmas holiday. Slow Cooker Roast 1 4-6 lb Chuck Roast (Only Chuck roast) 1 pkg Hidden Valley Ranch dressing mix (Dry) 1 pkg Hidden Valley Italian Dressing mix (Dry) 1 pkg Brown Gravy Mix 1/4 cup water Pour water into slow cooker Place roast in next Sprinkle the contents of the 3 dry mixes on top Cook for 5-6 hours on low. If you desire add chopped garlic or Onions In the final 2 hours add potatoes or vegetables of your choice. When the roast is done remove it to a serving plate and allow the remaining fat to cool and harden. Remove fat then make gravy (Secret) The more fatty a chuck roast is when purchased, the more it will fall apart. All Winter Stew - 2 1/4 lbs AAA Top Sirloin Roast cut into 1" cubes, braised and seasoned with salt and pepper - 2 lbs baby carrots - 3 cups 9 bean soup mix - 3 lbs baby red or purple potatoes cut into large cubes - 1 medium rutabaga cut into cubes - 4 cups beef broth - 5 medium cooking onions cut into quarters - 2 28 oz. cans diced tomatoes - 1 14 oz. can kidney beans washed - 3 cups red wine - 3 tbsp. italian seasoning spice - 2 tsp. garlic powder or 3 large cloves minced - 1/4 cup good quality soy sauce - 1 cup teryaki sauce - 16 oz. button mushrooms sliced and washed Put all ingredients together in a very large stovetop cooking container (pot, roast pan, etc.), mix well and cook on medium for 2h 30m stirring often to avoid burning. Turn down the heat to simmer for an additional 20m to 45m (until all vegetables are soft and meat is very tender), continuing to stir frequently. Finally, add enough Veloutine powder to thicken slightly (thicker than soup, not as thick as chili). Cool slightly and serve. I'll let you know how it turns out! In a greased 13 x 9-inch baking dish or a large oval casserole dish, alternately layer the sliced potatoes on bottom of the baking dish, then soup mixture (I like to sprinkle grated cheddar cheese on top of the soup mixture) then the ground beef mixture on top. 5. Since this is a large casserole I strongly suggest to place the baking dish on a jelly-roll sheet in case of any spills. 6. Bake covered with foil for about 1 hour at 350 degrees F. 7. Uncover and continue baking for another 20-30 minutes or until the potatoes are tender (baking time will vary depending on the thickness of your sliced potatoes). 8. Remove from oven then sprinkle with grated cheddar cheese; return to oven for 4-5 minutes or until the cheese has melted. oaky its in the oven now. I did things a bit different due to the fact Iam using the broccoli cheese soup. I started by frying 6 slices of bacon, cubed. WHen brown and crispy, pulled those out to drain on paper towel, then added the beef. I omitted the green pepper because of the change in soup. Instead of lawry's season salt, I used Paula Deen's house season that I make with onion powder added ( I keep this on hand) I am lucky enough to have a mandolin so I sliced red potatoes ( skin on) at 1/16" thick In with the soup mixture I used half and half in place of the milk ( cos I had it on hand and need to use it up ) and again Paula Deen's house season. I did not add cheese between layers as this is already a cheesy soup. The cheese will be added to the top and then sprinkled with the crispy bacon. Wish me luck more

I recently started seeing someone who has Irritable Bowel Syndrome, a seafood allergy and Acid Reflux. He can't eat many of the foods I love cooking such as Mexican, Seafood, traditional Italian sauces that are acidic, pizza and things like that. He doesn't like potatoes. Weird I know. I know he likes meat, noodle dishes (with what sauce I don't know), and salads. I want to make him dinner and I really like to cook but I don't want to make something bland because of his conditions. Resolved Question: Do you have a favorite baked potato wedge recipe?

I have some family coming over for a dinner this afternoon and I would like to have a nice baked potato wedge side dish. I have a little experiment cooking up now. On a cooking sheet, I have samples, 4 wedges per sample, all pealed red potatoes. One sample simply has sea salt, another is seasoned with Italian dressing, one with garlic, onion, salt, one with a peppered "season all", and one sample rolled in corn flakes and lightly seasoned with salt, onion, and garlic. They are separated and cooking at 450 F (smells good so far). I'm assuming they will take about 1/2 hour or so. I looked up some recipes on line but have always gotten great cooking advice on this forum. THANK YOU for any advice : ) I really appreciate it. The oil used to coat wedges and cooking sheet for my experiment is Extra Virgin Olive Oil.This just in... The crushed corn flake coating is fantastic. I have just diced some skinless chicken breasts and am now cooking them slowly in a frypan with oil, italian vinigarette dressing, dried garlic, portugese seasoning, white pepper, veggie salt, chinese 5 spice, chilli powder, all purpose seasoning and curry powder. It smells divine but I want to do something interesting to go with it. I don't have any potatoes or fresh vegies, but I do have lots of rice and pasts.
